What each ingredient does

Carrots
Their starch and pectin, once mashed, thicken the soup and give it a creamy body and sweet flavour.
Turnips
Their mild, slightly peppery flavour and starch add body to the stock.
Onions
Their sugars and aromatic compounds build savoury depth as they soften in the stock.
Stock
Forms the liquid base that carries the flavour of the vegetables.

The step that matters

Mash the carrots through a colander. Pushing the cooked carrot through a colander breaks down its cell walls and releases starch, which is what makes the soup creamy. Skipping this leaves the soup thin and grainy.

Swap the onion

How well each one fits the dish's main ingredients (turnip, carrot):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits better
  4. Onionthe original

Fit is the average pairing score against turnip, carrot. Candidates are from the same food group and used in at least 100 recipes.
