Roast Joint of Muttox

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Rub the leg of mutton with coarse sea salt.

Roast

  1. Sprinkle flour on the meat as the fat renders out.

  2. Brown the meat evenly on all sides.

  3. Baste the mutton well during cooking.

Finish and serve

  1. When done, pour off the drippings and add a little boiling water, but do not drown the meat's juices.

  2. Serve with currant jelly if desired.

What each ingredient does

Leg of mutton
Forms the main body of the roast, providing the meat, fat and juices that give the dish its flavour.
Flour
Sprinkled on the meat as fat renders, it helps the surface brown and form a crust.
Currant jelly
Adds sweetness and acidity to balance the rich, savoury meat.

The step that matters

Adding boiling water after the drippings are poured off. Too much liquid steams the meat instead of letting its surface brown, and it dilutes the juices that give the sauce its flavour. A small amount keeps the roast browned and the juices concentrated.

Swap the currant

The recipe marks currant as optional. How well each one fits the dish's main ingredients (mutton, flour):

  1. Raisinfits better
  2. Red currantfits better
  3. Pumpkinfits better
  4. Currantthe original

Fit is the average pairing score against mutton, flour. Candidates are from the same food group and used in at least 100 recipes.
