Roast Fillet of Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Ask the butcher to remove the bone from the center of the fillet.

  2. Fill the cavity with a mixture of bread crumbs, salt pork, onion, sweet herbs, pepper, and salt.

  3. Use the remaining mixture to fill any gaps and secure with skewers.

Roast

  1. Place in a baking pan, cover, and add water.

  2. Bake at 350°F (175°C) for 1.5 hours, basting occasionally.

  3. Remove the cover and roast until the outside is a rich brown.

What each ingredient does

Veal fillet
Forms the main body of the dish and cooks to a tender, moist texture when roasted covered.
Bread crumbs
Absorb juices from the stuffing and help hold its moisture as it cooks.
Salt pork
Adds fat that keeps the stuffing and surrounding meat moist and flavorful.
Onion
Contributes savory aroma and sweetness as it softens in the stuffing.

The step that matters

Remove the cover and roast until the outside is a rich brown. Browning depends on surface dryness and high dry heat, which the covered steam-roasting stage does not provide. Uncovering lets the surface brown through the Maillard reaction, adding color and roasted flavor.

Swap the onion

How well each one fits the dish's main ingredients (veal, bread, pork, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against veal, bread, pork, pepper. Candidates are from the same food group and used in at least 100 recipes.
