Why it works: Potato and pepper are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 8,305 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Fish Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Mix equal parts cold boiled fish and mashed potatoes, breaking the fish into very fine pieces.

  2. Add melted butter or cream, and season with salt and pepper.

Bake and serve

  1. Butter a pudding dish and pour the mixture in, keeping the top rough.

  2. Bake in a 400°F (200°C) oven until heated through and the top is nicely browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cold boiled fish
Provides the main body and flavour of the pudding.
Mashed potatoes
Binds the fish and adds softness and moisture to the pudding.
Butter or cream
Adds richness and moisture, giving a softer, more tender texture.

The step that matters

Keeping the top rough before baking. A rough, uneven surface has more exposed points, which brown more quickly and deeply in the oven. A smooth top browns evenly but less richly, so the rough surface helps achieve the nicely browned finish.

Swap the potato

How well each one fits the dish's main ingredients (fish, butter, pepper):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Tomatofits less well
  4. Asparagusfits less well

Fit is the average pairing score against fish, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
