Oysters and Macaroni

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Stew macaroni in good gravy until tender.

  2. Layer macaroni in a pie dish.

  3. Add a layer of fresh oysters, removing gills.

  4. Season with pepper, coarse sea salt, grated lemon rind, and cream or olive oil.

  5. Strew bread crumbs over the top.

  6. Brown in a 400°F (200°C) oven.

  7. Serve with plenty of lemon juice.
