Roast Goose

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the stuffing

  1. Preheat the oven to 350°F (175°C).

  2. Combine the onion, sage, bread crumbs, pepper, and salt in a bowl.

  3. If desired, mix in the egg yolks.

Roast and serve

  1. Stuff the goose with the dressing, leaving some space for it to swell.

  2. Roast the goose for about 2 hours or until fully cooked.

  3. Serve with gravy and apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Absorb moisture and give the stuffing body so it holds together.
Egg yolks
Bind the stuffing and add richness and firmness when cooked.
Onion
Adds savory aromatic flavor that permeates the stuffing as it cooks.

The step that matters

Leave space in the goose when stuffing. Stuffing expands as it heats and absorbs juices. Packing it tightly can prevent even cooking and may leave the centre under-cooked, so room to swell is needed.

Swap the onion

How well each one fits the dish's main ingredients (sage, bread, pepper, egg):

  1. Capsicumfits better
  2. Spinachfits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against sage, bread, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
