Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rabbit
Forms the main body of the dish, cooking through during the long roast.
Bread crumbs
Absorb juices from the liver and onion, keeping the stuffing moist and binding it.
Liver
Adds richness and depth of flavour to the stuffing.
Sweet oil or butter
Fat that carries flavour and helps the outside of the rabbit brown in the oven.
Fat ham or sweet salt pork
Adds fat and savoury flavour to the liver stuffing as it cooks.

The step that matters

Baste the rabbit frequently. Rabbit is very lean, so it dries out easily during a long roast. Regular basting with fat and pan liquid keeps the meat moist and promotes even browning.
