Butter and flour barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main briny, savoury flavour of the sauce.
Butter
Adds richness and a smooth, silky mouthfeel to the sauce.
Flour
Thickens the oyster liquor as it heats, giving the sauce body.
Lemon juice
Adds acidity that brightens and balances the rich, briny flavour.

The step that matters

Add the butter and flour mixture to the hot liquor and stir. Flour lumps if it is not dispersed evenly. As the mixture heats, its starch swells and thickens the liquid, so stirring keeps the sauce smooth and evenly thickened.
