Boiled Carrots

Ingredients

Directions

  1. Wash and scrape the carrots, cutting out any discolored spots.

  2. Cut the carrots into thick slices.

  3. Place the carrots in a pot with enough boiling salted water to cover them.

  4. Boil gently until tender, then boil quickly to evaporate most of the water, leaving about 1 tablespoon.

  5. Sprinkle with pepper and add a small piece of butter rolled in flour.

  6. Toss gently until the juice thickens and adheres to the carrots.

  7. Serve immediately, optionally adding minced parsley and a little thick cream mixed with flour to prevent curdling.
