Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like setting agent that firms the milk mixture into a sliceable mousse.
Milk
Forms the liquid base and gives the mousse its creamy, smooth body.
Powdered almonds
Adds almond flavour and a fine, slightly grainy richness to the mousse.
Loaf sugar
Sweetens the mousse to taste.

The step that matters

Dissolving the isinglass. Isinglass must be fully dissolved in the hot milk before straining; undissolved pieces leave a lumpy texture and uneven setting, and the mixture must not be boiled so hard that the setting power is weakened.

Swap the almond

How well each one fits the dish's main ingredients (milk, sugar, cream):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Pistachiofits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against milk, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
