Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the milk into a smooth, glossy custard as it heats and gels.
Rich milk
Provides the liquid base and richness that the thickened pudding is built on.

The step that matters

Cook over low heat until thickened. Arrowroot thickens when heated but can scorch on the bottom of the pan, and it loses thickening power if overheated or boiled too long. Gentle heat with constant stirring gives an even, smooth set.

Swap the arrowroot

How well each one fits the dish's main ingredients (milk, sugar):

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
