Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and tender texture when cooked briefly until they ruffle.
Butter
Adds richness and a smooth, rounded mouthfeel to the broth.
Milk
Adds creaminess and mild sweetness, softening the broth's briny flavour.

The step that matters

Cook the oysters only until they ruffle. Oysters toughen and shrink when overcooked, becoming rubbery. Brief heat is enough to firm the edges and release their flavour, so timing matters.
