  4. Add soaked crusts and 1-2 eggs, mixing thoroughly.

  5. Moisten with sweet milk if the mixture is dry.

  6. Gently fold in the oysters without breaking them.

Stuff and roast

  1. Stuff the turkey, starting with the breast, and cover openings with a floured cloth tied with twine.

  2. Spread the turkey with butter, salt, and pepper.

  3. Place in a roasting pan with ½ pint of hot water and roast for 2 hours, basting often.

  4. Use a swab made of a stick with a cloth to baste the turkey.

  5. Turn the turkey until browned on all sides.

  6. Baste the turkey with butter and flour 30 minutes before done.

What each ingredient does

Turkey
Forms the main body of the dish, cooked whole so the dressing sits inside it.
Stale bread
Absorbs liquid and provides the body of the dressing.
Oysters
Add briny, savoury flavour to the dressing.
Eggs
Bind the dressing so it holds together when stuffed and cooked.
Butter
Adds richness and fat, helping the dressing and skin brown.

The step that matters

Stuffing the turkey before roasting. Dressing packed into the cavity expands as it cooks and can slow heat reaching the centre, so it must be fully cooked, and the stuffed bird needs enough time to reach a safe temperature throughout.
