Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. In a buttered baking dish, layer mushrooms and cracker crumbs alternately.

Season and bake

  1. Season each layer with butter, coarse sea salt, black pepper, and a little lemon juice.

  4. Bake for 20 minutes and serve hot.

What each ingredient does

Mushrooms
Form the bulk of the dish and release moisture that softens the crumbs as it bakes.
Cracker crumbs
Absorb liquid and add structure, giving the layers body and a light crunchy top.
Butter
Adds richness and fat, helping the top brown and carrying flavor through the layers.
Lemon juice
Adds acidity that brightens the flavor of the mushrooms and cuts the richness.
Cream or delicate stock
Provides moisture that soaks into the crumbs and sets into a tender, saucy base.

The step that matters

Pour the cream or stock over the top. The liquid must reach down through the layers so the crumbs soften evenly; too little leaves dry crumbs, while the bake time is short enough that the dish can end up under-moistened.
