Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites provide the firm structure that holds the creamy yolk filling.
Butter or olive oil
Adds fat and richness, giving the yolk filling a smooth, creamy texture.
Vinegar
Adds acidity that brightens the rich yolk filling.
Mustard
Adds sharp, pungent flavor that balances the richness of the yolks.

The step that matters

Carefully remove the yolks without breaking the whites. The whites are the only holder for the filling, so a torn white leaks yolk and leaves the halves unstable. Gentle cutting and lifting keeps each half intact.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, butter, vinegar, pepper, mustard):

  1. Horseradishfits better
  2. Shallotfits about as well
  3. Capsicumfits about as well
  4. Lettucethe original

Fit is the average pairing score against egg, butter, vinegar, pepper, mustard. Candidates are from the same food group and used in at least 100 recipes.
