What each ingredient does
- Finely ground coffee
- Provides the flavour compounds extracted by the hot water, so grind size controls strength and clarity.
- Boiling water
- Extracts soluble flavour and aroma from the ground coffee as it passes through.
The step that matters
Pour the boiling water over the coffee gradually. Pouring slowly lets the water saturate the grounds evenly and extract flavour steadily. Pouring all at once can over-saturate the top and produce uneven, weak or bitter coffee.
