Welsh Rarebit

Ingredients

Directions

Make the rarebit

  1. Melt the butter in a double boiler over boiling water.

  2. Break the cheese into small pieces and stir it into the melted butter.

  3. Season with red pepper, mustard, and salt, then stir in the baking soda.

  4. As the cheese softens, slowly add the ale, stirring constantly until smooth and thick.

  5. Stop cooking before it curdles; if it stops too soon, it may become stringy.

Serve

  1. Serve the mixture on toast or crackers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into a smooth, rich sauce that sets as it cools.
Ale
Thins the melted cheese and adds moisture for a smooth, pourable texture.
Baking soda
Raises the pH of the cheese, helping it melt smoothly and resist curdling.
Butter
Adds fat that keeps the cheese sauce silky and rich.

The step that matters

Stop cooking before it curdles. Cheese sauces turn grainy and separate when overheated, as the proteins tighten and squeeze out fat. Removing the pan once the mixture is smooth and thick keeps it creamy.

Swap the mustard

How well each one fits the dish's main ingredients (cheese, cream cheese, cream, butter, pepper):

  1. Potatofits better
