Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Spring chicken
Provides the main meat that is steamed, braised and simmered until tender.
Butter
Fat that browns the onion and carries flavour into the sauce.
Bermuda onion
Softens and browns in butter, adding sweetness and savoury depth to the sauce.
Flour
Thickens the cream into a smooth sauce that clings to the chicken.
Rich cream
Adds fat and body, giving the sauce a rich, smooth texture.
Sparkling tokay wine
Adds acidity and aroma to the sauce when stirred in at the end.

The step that matters

Bring the sauce to a boil, then keep it at a gentle simmer. Cream can scorch or separate if it boils hard or sits over too much heat. Flour thickens best when the sauce is brought to a boil and then kept at a gentle simmer, so the sauce stays smooth and does not break.

Swap the onion

How well each one fits the dish's main ingredients (chicken, butter, flour, cream, wine, pepper):
