Orange and sugar barely smell alike, yet cooks put them together in 19,212 recipes: they work on texture and structure more than aroma.

What each ingredient does

Orange peels
Provides the main body and aromatic bitter-citrus flavor, which soaking and boiling reduce.
Sugar
Sweetens the peel and, as a concentrated syrup, preserves it and gives it a glossy, candied texture.

The step that matters

Changing the water until the bitterness is gone. Bitter compounds in the peel leach out slowly into clear water. Stopping early leaves the candy bitter, so keep changing the water and tasting until it is mild.
