Why it works: Sugar and chocolate are a kitchen classic. They rank in the top 13% of all ingredient pairs, and cooks put them together in 15,404 recipes. Both carry guaiacol, which smells smoky, sweet. The science ↓
Cream Taffy
Ingredients
Directions
Prepare the sugar
Pour enough cold water over the sugar to cover it well before heating.
Make the taffy
Heat until it begins to boil.
Add the vinegar.
Just before the taffy is done, add the butter.
Cook until it hardens when dropped into cold water.
Do not stir.
Remove from heat.
Add flavoring if desired.
Quickly pour into well-buttered platters.
If using chocolate, add it just after pouring out the taffy.
Set in a cool place.
Pull and finish
Begin pulling as soon as it is cool enough to handle.
Pull quickly for best results.
Continue pulling until it is hard and very white.
Cut into small pieces.
Set aside for several hours to cream nicely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Light brown sugar
- Provides the sweetness and forms the base of the taffy as it cooks to a hard candy.
- Vinegar
- Adds a little acidity, which helps keep the sugar from crystallizing too readily.
- Butter
- Adds fat for a softer, richer texture and a smooth bite in the finished taffy.
The step that matters
Do not stir while cooking. Stirring a boiling sugar syrup can encourage sugar crystals to form, leading to a grainy rather than smooth taffy. Cook until the syrup hardens in cold water, then remove from heat.
