Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides meat flavour and collagen that gives the broth body as it simmers.
Pearl barley
Releases starch as it cooks, thickening the broth and adding a soft texture.
Onion
Adds savoury sweetness and aroma to the broth as it simmers.
Celery
Contributes aromatic, vegetal flavour to the simmering broth.

The step that matters

Let the broth cool, then remove all fat. Fat rises and sets as the broth cools, so it can be lifted off cleanly. Skimming while cool keeps the broth clear and prevents a greasy mouthfeel.
