Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Irish moss
Thickens the liquid as it cooks, giving the lemonade a light, slightly silky body.
Lemon juice
Adds acidity that brightens the flavor and sharpens the drink.
Sugar
Adds sweetness to balance the tartness of the lemon juice.

The step that matters

Cooking the moss for 2 hours just below boiling. The moss must simmer long enough to release its thickening compounds into the water. Keeping it just below a boil extracts them steadily without a hard, rolling boil.
