Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rolled or crushed oatmeal
- Provides the starch that thickens the water into a porridge.
- Cold water
- Extracts the starch from the oatmeal, forming the thin liquid that is then thickened.
The step that matters
Cooking the strained water until thickened. Starch granules must be heated in liquid to swell and gelatinize; if the mixture is not thickened before steaming, the porridge will stay thin and watery.
Swap the lemon
