Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meaty substance, and long slow cooking turns its connective tissue tender.
Flour
Coats the meat for browning and thickens the cooking liquid into a gravy.
Potatoes
Soften during cooking and add starch that helps thicken the stew and give body.
Onion
Browns in the fat to add sweetness and savory depth to the stew.
Carrots
Add natural sweetness and hold their shape through long cooking.

The step that matters

Brown the floured meat. Browning in hot fat creates deep flavor through the Maillard reaction. Crowding the pan or stirring too little makes the meat steam and turn grey, losing that savory flavor.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip, potato, pepper, flour):

  1. Parsnipfits better
  2. Leekfits better
  3. Okrafits better
  4. Onionthe original

Fit is the average pairing score against beef, carrot, turnip, potato, pepper, flour. Candidates are from the same food group and used in at least 100 recipes.
