Roast Pork

Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Rub the surface of the pork with coarse sea salt, then sprinkle lightly with sage and pepper.

  2. Dredge the pork with flour.

  3. Bake in a hot oven at 400°F (200°C) for the first 20 minutes, or until delicately browned.

  4. Reduce the heat and roast for 20 minutes per pound of meat, basting often.

  5. Ensure the pork is thoroughly cooked before serving.
