What each ingredient does

Egg yolk
Lecithin in the yolk emulsifies the oil and water, holding the dressing together and giving it body.
Mustard
Acts as a secondary emulsifier, helping the oil and lemon juice stay blended and stable.
Lemon juice
Adds acidity that brightens the flavour and helps balance the richness of the oil.
Oil
Forms the fat phase that gives the dressing its thick, creamy texture when emulsified.

The step that matters

Gradually pour in the oil while whisking. Adding oil slowly lets the yolk coat each droplet and form a stable emulsion. Pouring too fast can break the mixture into separated oil and liquid.
