What each ingredient does

Cheese
Melts into the ale to form the rich, creamy body of the sauce.
Ale
Thins the melted cheese into a smooth, pourable sauce and adds its own malty flavour.
Egg
Adds protein that thickens the sauce and helps bind it as it cools.
Mustard
Adds sharp, tangy flavour that cuts through the richness of the cheese.

The step that matters

Stirring the cheese into the boiling ale. Cheese proteins can seize and turn grainy or stringy if overheated or added too quickly. Stirring constantly while adding the cheese mixture helps it melt evenly into a smooth emulsion.
