Cream Taffy

Ingredients

Directions

Make the taffy

  1. Pour enough cold water over the sugar to cover it well before heating.

  2. Once it begins to boil, add the vinegar.

  3. Just before the taffy is done, add the butter.

  4. Cook until it hardens when dropped into cold water.

  5. Do not stir.

  6. Remove from heat.

  7. Add flavoring if desired.

Pour and pull

  1. Quickly pour into well-buttered platters.

  2. If using chocolate, add it to each platter right after pouring.

  3. Set in a cool place.

  4. Begin pulling as soon as it is cool enough to handle.

  5. Continue pulling until it is hard and very white.

  6. Cut into small pieces and set aside for several hours.

What each ingredient does

Light brown sugar
Provides the sweet base that cooks down into the chewy taffy body.
Vinegar
Adds a little acidity that helps keep the sugar from crystallising too coarsely.
Butter
Adds fat for a softer, richer texture and smoother bite.

The step that matters

Do not stir.. Stirring a boiling sugar syrup can trigger sugar crystals to form, leaving the taffy grainy instead of smooth. Letting it cook undisturbed keeps the texture even.
