Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rolled or crushed oatmeal
Provides the starch that thickens the strained water into a gruel.
Cold water
Extracts the starchy liquid from the oatmeal as it settles and is drained.
Cream or milk
Adds fat and softness, giving the gruel a smoother, richer mouthfeel.

The step that matters

Cooking the strained water until thickened. Starch in the oat water only thickens when heated and then gelatinizes. Undercooking leaves it thin, while the long steam in the double boiler keeps the gruel gentle and smooth.
