Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut peppers in half or slice off the top.

  2. Remove seeds and parboil for 10 minutes.

  3. Stuff with a mixture of creamed vegetables, bread crumbs, cold meats, vegetables, and seasonings.

  4. Bake in a moderate oven at 350°F (175°C) for 30 minutes.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
