Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Roast Beef
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Ensure the meat is of good color with plenty of fat.
Wash the roast of beef.
Heat a pan on the stove until it is smoking hot.
Sear the roast on three sides in the hot pan.
Season well with pepper and coarse sea salt.
Roast and baste
Place the roast in a hot oven at 400°F (200°C).
Cook for 1.5 to 1.75 hours for a rare center.
Baste often during cooking.
Do not add water to the pan while cooking.
If the roast is not fatty enough, add beef drippings or butter for basting.

What each ingredient does
- Beef roast
- Provides the main protein; its fat content keeps the meat moist and flavorful while roasting.
- Black pepper
- Adds sharp aroma and flavor to the seared outer crust.
- Beef drippings or butter
- Adds fat for basting, promoting browning and a richer surface flavor.
The step that matters
Searing the roast on three sides in the hot pan. Searing in a very hot pan drives the Maillard reaction, browning the surface and building flavor. A pan that is not smoking hot will steam the meat instead of browning it.
