Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Stuff and roast

  1. Stuff the turkey with a mixture of bread crumbs, pepper, coarse sea salt, butter, onion, and thyme or sage.

  2. Alternatively, mix oysters with the bread crumbs or add raisins and sage, omitting the onion.

  3. Roast the turkey for 15 minutes per pound, basting often.

  4. Cover the breast with greased paper to keep it moist.

What each ingredient does

Turkey
Forms the main body of the dish, cooking through as it roasts.
Bread crumbs
Absorb juices and butter in the stuffing, keeping it moist and tender.
Butter
Adds fat and richness, helping the stuffing and skin brown.
Onion
Adds aromatic sweetness and savoury depth to the stuffing.

The step that matters

Cover the breast with greased paper. Lean breast meat dries out faster than the rest of the bird during a long roast, so covering it slows moisture loss and helps keep it juicy.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (turkey, bread, pepper, butter, onion, thyme, oyster):

  1. Lemonfits better
  2. Plumfits better
  3. Figfits better
  4. Raisinthe original
