Why it works: Lemon and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Larded Sweet Breads

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sweetbreads

  1. Soak the sweetbreads in cold water for 1.5 hours.

  2. Plunge them into boiling water and cook for 5 minutes.

  3. Once cold, carefully remove the skin and make incisions 1 inch apart.

  4. Insert tiny strips of salt pork into the incisions.

Make the stuffing

  1. In a bowl, mix the bread crumbs, butter, lemon zest, lemon juice, parsley, salt, and pepper.

  2. Put about 1 teaspoon of this mixture into each incision.

Bake and serve

  1. Dot the sweetbreads with bits of butter.

  2. Bake at 400°F (200°C) for 10 to 15 minutes until browned.

What each ingredient does

Sweetbreads
Provide the tender, delicate meat that is the body of the dish.
Salt pork
Adds fat and savory flavor that bastes the meat from within as it cooks.
Butter
Adds richness and fat, helping the crumbs brown and the meat stay moist.
Bread crumbs
Soak up the melted butter and lemon juice, giving the stuffing body and a crisp browned surface.
Lemon
Adds acidity and bright aroma that cut the richness of the butter and pork.

The step that matters

Bake at 400°F (200°C) for 10 to 15 minutes until browned. Sweetbreads are delicate and dry out quickly, while the crumb topping needs enough heat to brown. Watching for color rather than only the clock helps keep the meat moist and the crumbs golden.
