What each ingredient does

Cooked rice
Forms the bulk of the croquette and gives it a soft, starchy body.
Milk
Cooks with the rice to create a moist, creamy base.
Egg
Sets when stirred into the hot mixture, helping bind the croquettes together.
Sugar
Adds sweetness and helps the outside brown when fried.

The step that matters

Let the mixture cool before shaping. A warm, loose mixture is sticky and hard to shape, and it can break apart in the hot lard. Cooling lets the starch and egg firm up so the croquettes hold their form.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, milk, egg, sugar, butter):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Turmericfits less well
  4. Gingerfits less well

Fit is the average pairing score against rice, milk, egg, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
