What each ingredient does

Butter
Melts with the onion and mushrooms to cook them gently and carry their flavour into the sauce.
Flour
Thickens the stock or milk into a smooth sauce that coats the egg pieces.
White stock or hot milk
Forms the liquid base of the sauce, adding moisture and body.
Hard boiled eggs
Provide the main protein and bulk, with chopped whites and yolks giving the dish its texture.
Mushrooms
Add earthy flavour and a soft, moist texture to the sauce.

The step that matters

Adding the stock or milk gradually. Adding liquid slowly to the butter and flour mixture while stirring lets the starch hydrate evenly, preventing lumps and giving a smooth, properly thickened sauce.
