Why it works: Buckwheat and flour work together. They rank in the top 4% of all ingredient pairs, and cooks put them together in 660 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Buckwheat Cakes
Ingredients
Directions
In a large bowl, combine buckwheat flour, yeast, salt, and sugar.
Add warm water and milk to create a thin batter and beat well.
Cover the bowl and let it stand overnight.
If the batter is sour in the morning, stir in a pinch of baking soda dissolved in hot water.
Each morning, reserve some batter to use as a sponge for the next night instead of fresh yeast.
Add the usual supply of flour and other ingredients each night.
In cold weather, this can be done for a week or ten days before starting fresh.
