Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a pan, combine the washed rice, sugar, nutmeg, and salt.

  3. Add 2 quarts of milk to the pan and stir well.

Bake

  1. Bake for 1 hour, stirring occasionally.

  2. After 1 hour, add 1 more quart of milk and bake for another hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Thickens the pudding as its starch softens and gelatinizes during slow baking.
Milk
Forms the liquid base that cooks down into a creamy, custard-like texture.
Sugar
Adds sweetness and helps the pudding brown slightly at the surface.

The step that matters

Adding the second quart of milk after 1 hour. The rice needs enough liquid to keep absorbing and softening through the second hour of baking. Adding the milk on schedule keeps the pudding creamy rather than dry or stiff.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (rice, sugar, nutmeg, milk):

  1. Vanillafits better
  2. Coconutfits better
  3. Figfits about as well
  4. Raisinthe original

Fit is the average pairing score against rice, sugar, nutmeg, milk. Candidates are from the same food group and used in at least 100 recipes.
