Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the orange mixture as they set over gentle heat, giving it a smooth, rich body.
Sugar
Sweetens the custard and balances the acidity of the orange juice.
Orange juice
Supplies the main flavor and acidity of the dish.
Egg whites
Whip into a stiff foam that forms the light topping over the cooled custard.

The step that matters

Stir over low heat until thickened. Egg yolks set at moderate temperatures and can curdle or scramble if overheated. Gentle, steady heat and constant stirring keep the custard smooth while it thickens.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
