Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Adds sweetness and keeps the frozen ice softer and easier to scoop.
Lemon juice
Provides the sharp acidity that defines the lemon flavor.
Lemon zest
Adds aromatic lemon oils for a stronger citrus fragrance.
Egg whites
Whipped whites add air, making the ice lighter and less dense.

The step that matters

Folding in the egg whites. Stir the beaten whites in gently and only when the mixture is nearly frozen. Vigorous or early stirring deflates the foam, and a fully frozen base will not blend evenly with them, leaving a denser texture.
