Springfield Almond Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, cream together the sugar and butter until light and fluffy.

  3. Add the milk and mix well.

  4. In another bowl, combine the flour, cream of tartar, and baking soda.

  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. In a separate bowl, beat the eggs and then fold them into the batter.

  7. Pour the batter into jelly cake pans and bake until golden brown.

Make the custard and finish

  1. For the custard, mix the sour cream, one egg, chopped almonds, and sugar in a bowl.

  2. Flavor the custard with sherry.

  3. Allow the cake to cool completely before spreading the custard on top.

What each ingredient does

Eggs
Provide structure and richness as they set during baking.
Flour
Forms the main structure of the cake as its proteins set during baking.
Butter
Adds richness and tenderness, and helps trap air when creamed with sugar.
Sugar
Sweetens the cake and helps create a light, fluffy batter when creamed with butter.
Sour cream
Adds moisture and tang to the custard topping.
Baking soda
Reacts with the acidic cream of tartar to produce gas that lifts the batter.
