What each ingredient does

Blackberry juice
Provides the main fruit flavour and the bulk of the liquid.
White sugar
Adds sweetness and body, balancing the tartness of the juice.
French brandy
Adds alcohol and warmth, and helps preserve the cordial.

The step that matters

Skimming while the juice boils. Foam and scum rise as the juice and sugar boil. Skimming them off keeps the cordial clear and free of off-flavours, so it should be done thoroughly throughout the 15 minutes.
