Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat your oven to 350°F (175°C).

  2. In a bowl, mix the flour, pepper, salt, and cayenne pepper.

  3. Rub in the butter until the mixture resembles pie crust.

  4. Add the grated cheese and mix until combined.

  5. Incorporate the egg yolk to form a smooth paste; add lemon juice if needed.

  6. Roll out the paste to about 1/8 inch thick.

Shape and bake

  1. Cut into straws approximately 5 inches long and 1/4 inch wide.

  2. Place on a baking sheet and bake until golden.

Flour and butter barely smell alike, yet cooks put them together in 124,287 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pastry flour
Provides the structure that holds the dough together as it bakes.
Butter
Rubbed into the flour to create a short, tender texture.
Parmesan cheese
Adds savory flavor and fat, and helps the straws brown as they bake.
Egg yolk
Binds the dough into a smooth paste and adds richness.

The step that matters

Incorporating the egg yolk. Adding the yolk too quickly or overworking the dough can make it tough or unevenly bound. Mixing until just smooth keeps the paste tender and easy to roll.
