What each ingredient does

Sardines
Provide the main savory, rich fish flavor and the bulk of the topping.
Bread
Forms a crisp base that carries the topping without the spread soaking in.
Lemon juice
Adds acidity that brightens and balances the richness of the fish.
Queen olives
Contribute briny saltiness that seasons the sardine mixture.

The step that matters

Toast one side of the bread. Toasting the side that receives the sardine mixture firms and dries the surface, so the moist topping sits on top instead of soaking into the bread and making it soggy.

Swap the onion

How well each one fits the dish's main ingredients (bread, pepper, olive, lemon, parsley):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Onionthe original
