What each ingredient does

Chicken
Provides the meat and flavour base of the gumbo as it simmers in the water.
Flour
Coats the chicken so it browns well in the lard and helps thicken the broth.
Lard
Fat for frying the chicken, carrying browning flavour into the broth.
Okra pods
Release mucilage during long boiling, giving the gumbo its characteristic body and thickness.
Onion
Adds savory sweetness and aroma as it softens in the long simmer.

The step that matters

Frying the chicken until very brown. Browning the floured chicken in fat creates Maillard flavours that carry into the broth. Pale chicken yields a flatter, less savory gumbo.
