Sweetbreads and Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the sweetbreads

  1. Parboil the sweetbreads until tender.

  2. Brown the sweetbreads in a 400°F (200°C) oven, basting often with butter and pan juices.

  3. Season the sweetbreads with salt and pepper.

Cook the mushrooms and sauce

  1. In a double boiler, cook the mushrooms with 2 tablespoons of butter and a little salt until tender.

  2. Stir the rich cream into the mushroom liquor.

  3. Bring the mixture to a boil.

Assemble and serve

  1. Place a browned sweetbread in the center of each slice of toast and arrange a mushroom on each corner.

  2. Pour the sauce over the sweetbreads and mushrooms.

  3. Return the dish to the oven for 5 to 10 minutes, preferably under individual glass bowls.

  4. Serve hot.

What each ingredient does

Sweetbreads
Form the main body of the dish, becoming tender when parboiled and browned in butter.
Mushrooms
Add earthy flavour and moisture, softened in butter and combined with their own liquor.
Butter
Adds richness and helps browning by carrying heat across the sweetbreads and mushrooms.
Rich cream
Forms the sauce with the mushroom liquor, adding body and a smooth, rich texture.
Toast
Provides a crisp base that holds the sweetbreads and absorbs some of the sauce.

The step that matters

Boiling the cream sauce. Rich cream can curdle or separate if it boils hard or too long, so bring it just to a boil and pour it over promptly to keep the sauce smooth.
