Oboquettes of Sweetbreads

Ingredients

Directions

Prepare the sweetbreads

  1. Soak the sweetbreads in cold salted water for 1 hour, removing pipes and membranes.

  2. Cook in boiling salted water with vinegar for 20 minutes, then transfer to cold water to harden.

Make the mixture

  1. Chop the sweetbreads finely until almost a paste.

  2. Season with salt, pepper, and grated onion.

  3. Add the beaten yolks of 3 eggs, butter, cream, and enough cracker crumbs to form a stiff mixture.

  4. Wet your hands with cold water and shape the mixture into small balls or cork shapes.

Coat and fry

  1. Roll the shaped croquettes in cracker dust.

  2. Dip the croquettes in beaten egg.

  3. Roll again in cracker dust.

  4. Smooth the outside of the croquettes.

  5. Carefully drop them into hot fat.

  6. Fry until golden brown.

  7. Drain on brown paper to remove excess grease.

Serve

  1. Serve hot with sliced lemon or parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal sweetbreads
Form the soft, tender body of the croquettes once chopped and bound.
Eggs
Bind the mixture and give the outer coating a set, golden layer.
Cracker crumbs
Absorb moisture to give a stiff mixture and a crisp, browned crust.
Butter
Adds fat for richness and a softer, more tender interior.
Cream
Adds moisture that keeps the filling tender and smooth.

The step that matters

Make the mixture stiff enough to shape. Enough cracker crumbs must bind the chopped sweetbreads so the balls hold their shape. A wet mixture can break apart or release moisture in hot fat, so the croquettes may fall apart or fry unevenly.

Swap the onion

How well each one fits the dish's main ingredients (veal, vinegar, pepper, egg, butter, cream, lemon):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Spinachfits better
  4. Onionthe original

Fit is the average pairing score against veal, vinegar, pepper, egg, butter, cream, lemon. Candidates are from the same food group and used in at least 100 recipes.
