Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the base

  1. Melt butter and flour together in a saucepan over medium heat.

  2. Add salt, white pepper, and gradually stir in milk until smooth.

  3. Simmer until thickened, then add the chopped veal or chicken and stir well.

Fold and bake

  1. Set aside for 10 minutes, then gently fold in chopped parsley and whipped egg whites.

  2. Pour mixture into a buttered baking dish and bake at 350°F (175°C) for 15 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to stiff foam, they trap air that lifts the souffle as it bakes and sets.
Milk
Forms the thickened white sauce base that holds the meat and the whipped whites together.
Butter and flour
Cooked together into a roux that thickens the milk into a smooth sauce.
Veal or chicken
Provides the main protein and savory flavor of the souffle.

The step that matters

Fold in the egg whites gently. Stiffly whipped egg whites hold air bubbles, and vigorous stirring deflates them. Gentle folding keeps the air so the souffle rises during baking.

Swap the white pepper

How well each one fits the dish's main ingredients (veal, butter, flour, milk, parsley, egg):

  1. Nutmegfits better
  2. Capersfits better
  3. Tarragonfits better
  4. White pepperthe original
