Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the ground veal, ground salt pork, crushed milk crackers, beaten eggs, softened butter, chopped onion, nutmeg, salt, and pepper. Mix the ingredients thoroughly until well combined.

Bake and serve

  1. Press the mixture into a loaf pan and add a little water to the bottom.

  2. Sprinkle additional crumbs on top.

  3. Bake for about 1 hour, basting often with the pan juices.

  4. Allow to cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meaty body and structure of the loaf.
Salt pork
Adds fat and moisture so the loaf stays juicy as it bakes.
Milk crackers
Soak up liquid and help the loaf hold together in slices.
Eggs
Bind the mixture and set as it bakes, giving the loaf firmness.
Butter
Adds richness and fat that softens the texture and aids browning.

The step that matters

Basting with the pan juices. Basting during the long bake returns melted fat and juices to the surface, keeping the top from drying out and encouraging browning.
