Fillet of Beef with Mushroom Sauce

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wipe the fillet and remove the fat, veins, and tendons.

  2. Lard the fillet with thin strips of pork, or have the butcher do it.

  3. Rub the fillet with coarse sea salt and black pepper.

  4. In a baking pan, place 2 slices of fat pork, 1 slice of onion, and a bit of bay leaf.

  5. Add the fillet to the pan and bake at 400°F (200°C) for 30 minutes, basting often.

  6. Serve with mushroom sauce poured around the meat.
