Roast Mutton, Breton Style

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Push a clove of garlic into the knuckle end of the leg of mutton.

  3. Soak the red beans in water for several hours, then drain.

Cook the beans

  1. Boil the beans in fresh water until tender, about 1 hour.

  2. Drain the beans and add them to the pan with the mutton for the last hour of cooking.

  3. Alternatively, fry the drained beans in dripping with chopped onion until lightly browned.

  4. Serve the fried beans around the mutton when ready.

What each ingredient does

Leg of mutton
The main meat, which becomes tender and flavourful during long roasting.
Red beans
Provide starchy body and a hearty texture as the side dish.
Garlic
Adds aromatic pungency that mellows and perfumes the meat as it roasts.
Dripping
Fat that carries flavour and helps the onion and beans brown when fried.
Onion
Adds sweetness and savoury depth as it softens and browns with the beans.

The step that matters

Soak and boil the beans until tender. Dried beans must be fully hydrated and cooked through; the starch only softens properly with enough time in water, and undercooked beans stay firm and chalky.

Swap the clove

How well each one fits the dish's main ingredients (mutton, garlic, beans, onion):

  1. Cuminfits better
  2. Turmericfits better
  3. Capersfits better
  4. Clovethe original
